All that I played was Ultima 8: Pagan, which I played long time ago as a kid, however I liked the huge manual, the map and everything that came along with the game. I was never able to actually beat the game, and it was much later I found out about the other prequels and the whole history around the game. Also I am baffled on how you managed to record these long ass longplays, plus they are Apple II versions!!!

According to Mobygames, Apple II version of Ultima 1 thru 5 are the original version.

I use Applewin emulator to play the Ultima games and have save states.

I use virtualdub to record apple II games and used either lagarith lossless codec and/or TSCC record it. You can also use Camtasia to record it too.

why dont you record the dos version? (since i suppose it has better sound and graphics) you can use this version of dosbox which has save states and avi output: http://ykhwong.x-y.net/

I will do the dos version. I will do it when I start doing Ultima V. I have one more Ultima game before I can longplay Ultima V. When I get to Ultima V, I will longplay both versions, the Apple II and the Dos version.
