It looks ok. You seem to have solved the cropping issue from before. I hope you have learned something from all the messing about getting this video right as it is all relevant no matter which system you record.
On youtube in your TAG settings, you can add yt:stretch=16:9 it will aspect correct the gameplay part at the expense of stretching the fmv sections, the lesser of two evils. Viewers are more forgiving of stretched wide rather than extra tall video I think.
In case the question comes up where we don't aspect correct the source for archive, it is because it is important to preserve the Sharpness of the hardware aspect resolution. The viewer is then free to aspect to what ever suits them best while preserving the original resolution.
Bizhawk / Lagarith should always render the avi in rgb. The avs script will do the conversion to yuv, but that function should be the last command that is run at the bottom of the avs file.

You don't ever need to specify a resolution in bizhawk. That is only for resizing which you don't need to do. Bizhawk will always dump in 1:1 resolution.
As for cropping that is game dependant so I casnt give you any numbers. Just crop to what fits all of the gameplay in without cutting any section of video. Don't crop to bios screen as that is usually offset to the left and also smaller than most PAL games.
I am a little concerned by this question. At no point should you be specifying in the avs a fixed resolution. The emulator will dump the game in the correct 'Hardware' resolution. The most you would need to do is enable 2x pixel doubling for low res games. PlayStation will always come out with borders to account for any overscan or games with mixed resolutions.
The maximum vertical res is usualy 480 with ntsc games and 512 on pal games. Horizontal can be 640 but sometimes larger. If the playstation hires mode is used then you will see 512 horizontal res.
