In Bizhawk go to Tool > Multi-disc bundler. Then open the two discs you need and save them as an .xml file

Bizhawk is one the best emulators for PSX games ever.
Too bad that PSX fan translations still do not work on it (only original PSX ISOS works in PSXHawk).
